Pasta with Asparagus
Serves: 4-5
Prep time: 30 min
Ingredients:
12 oz small pasta
1 bunch asparagus trimmed, halved and blanched
3 eggs, whisked
1/2 cup cream
1 tbsp pesto
2 tbsp extra virgin olive oil
Parmesan cheese, to serve
Directions:
Prepare the pasta according to package directions. Drain pasta and return to pan.
Add eggs, olive oil, cream, pesto and parmesan to pasta, tossing quickly over a low heat. Stir in asparagus and serve.
Easy One-Pot Spaghetti
Serves: 4-5
Ingredients:
12 oz spaghetti
1/2 onion, chopped
1 lb boneless chicken breast half, cooked and diced
1 (6 oz) can artichoke hearts, drained
1/2 can chickpeas, drained
2 garlic cloves, crushed
1.5 cups tomato sauce
2 cups water
3 tbsp extra virgin olive oil
1 tsp dried basil
1 tsp dried oregano
1/3 cup fresh parsley, finely cut
1/3 cup crumbled feta cheese
Directions:
Heat a large saucepan over medium-high heat. Add in olive oil and gently saute the onion, garlic, chicken, chickpeas, artichoke hearts, water, and tomato sauce. Season with salt and black pepper and bring to a boil.
Add in spaghetti, basil and oregano, and stir. Reduce heat and simmer until the spaghetti is cooked to al dente.
Sprinkle with parsley and feta cheese, and serve.
